On your next visit to New Orleans, learn how to cook Louisiana style from top chefs at the New Orleans School of Cooking. Fun is a primary ingredient in their kitchen, as chefs teach New Orleans specialties such as gumbo, jambalaya, and pralines, pronounced as paw-lines in NAWLINS. You will learn about the use of spices and seasoning in Creole and Cajun cuisine, and how to make a delicious roux for soups and gravies. You are “ga-ron-teed” to have a good time as you learn about the history and folklore of the Old South.
The cooking classes and the Louisiana General Store are located in a classic 1830s molasses warehouse between Decatur and Chartes Streets. Reservations are recommended for this popular French Quarter establishment. Come hungry, as portions are generous and include iced tea, lemonade and Abita beer, which is brewed by the Abita Brewing Company 30 miles north of New Orleans.
The school offers group demonstrations for 25 or more people, group hands-on classes for eight or more, team building classes, rehearsal dinners and off-site events. Menus and amenities are tailored to your group’s interest and personality.

First Course
New Orleans Style BBQ Shrimp
Plump whole shrimp sautéed with butter, garlic and black pepper.
Second Course
Corn and Crab Bisque
Lump crabmeat and corn combined with cream and seasonings.
Third Course
Chicken and Cajun Smoked Sausage Jambalaya
Tender chicken cubes and smoked sausage with celery, onions, bell peppers, seasoning and white rice.
Fourth Course
Sweet Mini Pecan Pies
Molasses, sugar and pecans in a pie shell.
